Instructions

  1. Prepare the chipotle lime dip: In a small bowl, combine the mayonnaise, lime juice, ground chipotle powder, chili powder, paprika, cumin, and garlic powder. Mix well until thoroughly blended. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  2. Preheat the oven: Set your oven to 400 degrees Fahrenheit to get it ready for baking the fries.
  3. Cut and coat the sweet potatoes: Peel (optional) and cut the sweet potatoes into long sticks resembling fries. Place them in a large Ziploc bag, add just enough vegetable oil to lightly coat the fries, seal the bag, and toss to evenly distribute the oil.
