Description

Sweet Chili Chicken features tender, bite-sized pieces of seasoned chicken breasts cooked to perfection and coated in a vibrant sweet and spicy sauce. This dish combines savory, sweet, and tangy flavors, making it an irresistible meal served over fluffy white rice and garnished with fresh green onions and sesame seeds.

Ingredients

Scale

Chicken and Coating

  • 2 boneless skinless chicken breasts, about 1 pound
  • ¼ cup (32 g) cornstarch
  • ½ teaspoon paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Sauce

  • ¼ cup (68 g) Thai sweet chili sauce
  • 2 tablespoons soy sauce
  • 2 teaspoons sriracha sauce
  • 1 teaspoon garlic, minced
  • ½ teaspoon ground ginger
  • 1 tablespoon honey

For Frying and Serving

  • 3 tablespoons canola oil, for frying
  • 2 cups cooked white rice, for serving
  • green onions, chopped for garnish
  • sesame seeds, for garnish

Instructions

  1. Prepare the chicken: Cut the chicken breasts into bite-sized pieces. In a bowl, combine cornstarch, paprika, kosher salt, and black pepper. Coat the chicken pieces evenly with the cornstarch mixture.
  2. Make the sauce: In a separate bowl, whisk together the Thai sweet chili sauce, soy sauce, sriracha sauce, minced garlic, ground ginger, and honey until well combined.
  3. Cook the chicken: Heat 3 tablespoons of canola oil in a large skillet over medium-high heat. Add the coated chicken pieces and fry until golden brown and cooked through, about 6-8 minutes, turning occasionally for even cooking.
  4. Add the sauce: Reduce the heat to medium. Pour the prepared sauce over the cooked chicken in the skillet. Toss to coat the chicken evenly with the sauce and cook for an additional 3-5 minutes until the sauce is heated through and slightly thickened.
  5. Serve: Serve the Sweet Chili Chicken hot over cooked white rice. Garnish with chopped green onions and a sprinkle of sesame seeds for extra flavor and texture.

Notes

  • For a spicier kick, increase the amount of sriracha or add red chili flakes.
  • Use gluten-free soy sauce to make this dish gluten-free.
  • Substitute canola oil with vegetable or peanut oil if preferred.
  • Ensure chicken pieces are evenly coated in cornstarch for a crispy texture.
  • Garnish with fresh herbs like cilantro for added freshness.
