Instructions

  1. Prepare the Fruit and Spice Mixture: In a saucepan, heat the extra virgin olive oil over medium heat. Add the sliced pears and orange along with ground cinnamon, nutmeg, and allspice. Cook, stirring occasionally, until the fruit softens and the spices become fragrant, about 5 minutes.
  2. Add Maple Syrup and Water: Pour in the 1/4 cup of pure maple syrup and 2 cups of filtered water. Stir to combine and bring the mixture to a gentle simmer. Let it simmer for 15 minutes to allow the flavors to meld and the fruit to further soften.
  3. Blend the Mixture: Remove the saucepan from heat and allow the mixture to cool slightly. Then, transfer to a blender and blend until smooth. Strain the mixture through a fine sieve to remove pulp, resulting in a smooth spiced pear syrup.
  4. Prepare Citrus Maple Syrup Mixture: In a separate small bowl or cup, combine freshly squeezed orange juice, 2 tablespoons of pure maple syrup, and a pinch of ground cinnamon. Stir well to blend the flavors.
  5. Assemble the Mocktail: Divide the spiced pear syrup evenly between two glasses. Add the citrus maple syrup mixture to each glass and stir gently to combine.
  6. Top with Ginger Beer and Garnish: Fill the remainder of each glass with ginger beer to add fizz. Optionally, garnish with fresh rosemary sprigs for an aromatic touch. Serve immediately.
