Ingredients
Scale
Meat
- 4 pounds Sirloin Steak or Chuck Roast, cut into bite-sized cubes
Seasonings
- 1 ½ teaspoons Kosher Salt, or to taste
- 1 teaspoon Black Pepper
- 1 ½ teaspoons Garlic Powder
- 1 teaspoon Paprika, not the hot one
Other Ingredients
- 3 Tablespoons Olive Oil, divided
- 1 large Sweet Onion, thinly sliced
- 1 cup Low Sodium Beef Broth
- 1-ounce packet Au Jus Gravy Mix
- 6 cloves Garlic, pressed
- 5 Tablespoons Unsalted Butter, sliced
- Chopped Fresh Parsley, for garnish
Instructions
- Prepare the Steak: Cut the sirloin steak or chuck roast into bite-sized cubes, then season with kosher salt, black pepper, garlic powder, and paprika to evenly coat the meat.
- Sear the Steak: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the steak cubes in batches to avoid overcrowding and sear until browned on all sides, about 2-3 minutes per batch. Transfer the seared steak to the slow cooker.
- Sauté the Onion and Garlic: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the thinly sliced sweet onion and cook until softened and slightly caramelized, about 5 minutes. Add the pressed garlic and cook for another minute until fragrant.
- Add Liquids and Seasoning: Pour the beef broth into the skillet, scraping up any browned bits from the bottom. Stir in the au jus gravy mix until dissolved. Pour the mixture over the steak in the slow cooker.
- Cook Low and Slow: Place the sliced unsalted butter on top of the steak and onions in the slow cooker. Cover and cook on low for 7 hours, until the steak is tender and infused with garlic butter flavor.
- Finish and Serve: Stir the steak bites to combine with the garlic butter sauce. Garnish with chopped fresh parsley. Serve warm over mashed potatoes, noodles, or rice for a comforting meal.
Notes
- Use sirloin or chuck roast for tender, flavorful steak bites.
- Do not skip the searing step; it adds important flavor through browning.
- You can substitute unsalted butter with salted butter if preferred but adjust seasoning accordingly.
- Serve over mashed potatoes, egg noodles, white or brown rice for a complete meal.
- Leftovers store well refrigerated for 3 days and can be reheated gently on the stovetop.
