Description

Loaded Baked Potato Rounds are crispy potato slices topped with melted cheddar cheese, crispy bacon, sour cream, and green onions. Perfect as a savory appetizer or snack, these rounds bring all your favorite baked potato flavors in a bite-sized form, ideal for game day or casual gatherings.

Ingredients

Scale

Potato Rounds

  • 2 large russet potatoes, sliced into 1/2" rounds
  • 2 tablespoons butter, melted
  • salt, to taste
  • pepper, to taste

Toppings

  • 5 slices bacon
  • 1 cup cheddar cheese, grated
  • 1/2 cup sour cream
  • 3 green onions, green parts sliced

Instructions

  1. Preheat Oven: Preheat your oven to 400° Fahrenheit, ensuring it reaches the right temperature for crisp baking.
  2. Slice Potatoes: Wash and scrub the russet potatoes thoroughly, then cut them into about 1/2 inch thick rounds without peeling.
  3. Prepare Baking Sheet: Line a rimmed cookie sheet with foil for easy cleanup and even heat distribution.
  4. Brush Potato Rounds: Brush each potato round on both sides with melted butter and season with salt and pepper to taste.
  5. Bake Potato Rounds: Place the rounds on the prepared baking sheet and bake for 35 minutes, flipping them halfway through to ensure both sides become golden and tender.
  6. Cook Bacon: While potatoes bake, cook the bacon in a skillet over medium heat until very crispy. Let cool slightly, then crumble into small pieces.
  7. Add Toppings: Once potatoes are fork tender from baking, remove from oven and top each round with approximately 1 tablespoon of grated cheddar cheese and some crumbled bacon.
  8. Melt Cheese: Return the topped potato rounds to the oven and bake for an additional 2-3 minutes to melt the cheese.
  9. Serve: Remove from oven and immediately add a dollop of sour cream and sprinkle sliced green onions on top. Serve the loaded baked potato rounds warm for the best flavor experience.

Notes

  • Use russet potatoes for a fluffy, tender interior and crispy exterior.
  • For extra crispiness, you can broil the potato rounds for the last 1-2 minutes, watching carefully to prevent burning.
  • Feel free to customize toppings by adding jalapeños, chives, or diced tomatoes for more flavor variety.
  • Make sure bacon is very crispy to add a satisfying crunch.
  • These rounds are best served immediately as they can lose crispiness if left to sit.
