Description

Jalapeno Peach Chicken is a flavorful main course featuring tender chicken breasts cooked with a vibrant sauce of spicy jalapenos, sweet peaches, honey, and apple cider vinegar. This dish combines a perfect balance of heat, sweetness, and tanginess, making it a deliciously unique and succulent meal.

Ingredients

Scale

Chicken

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Sauce

  • 2 jalapenos, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) to prepare for baking the chicken later.
  2. Season Chicken: Season both sides of the chicken breasts with salt and black pepper to enhance the flavor.
  3. Sear Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and sear each side for 3-4 minutes until golden brown, then remove the chicken and set aside.
  4. Cook Jalapenos and Peaches: In the same skillet, add the diced jalapenos and peaches. Cook for 2-3 minutes until they soften slightly, releasing their flavors.
  5. Prepare Sauce: In a small bowl, whisk together honey, apple cider vinegar, water, and cornstarch until smooth to create a thickening sauce.
  6. Combine Sauce and Veggies: Pour the honey mixture over the jalapenos and peaches in the skillet, stir well, and bring the mixture to a simmer to activate the cornstarch thickening.
  7. Return Chicken to Skillet: Place the seared chicken breasts back into the skillet, spooning some of the sauce over the top to coat them.
  8. Bake: Transfer the skillet to the preheated oven and bake for 25 minutes or until the chicken is cooked through and juices run clear.
  9. Rest and Serve: Remove the skillet from the oven and let the chicken rest for a few minutes. Serve hot, spooning the jalapeno peach sauce over the chicken for a delicious finish.

Notes

  • Adjust the amount of jalapenos to control the heat level to your preference.
  • Use ripe but firm peaches for the best texture and sweetness balance.
  • This recipe works well with chicken thighs if you prefer darker meat.
  • Ensure the skillet is oven-safe to avoid transferring the chicken to a different dish.
  • Letting the chicken rest before serving helps retain its juices.
