Description

These Antipasto Skewers are a vibrant and flavorful appetizer combining classic Italian ingredients like olives, salami, mozzarella, basil, and grape tomatoes with a delicious honey-Dijon vinaigrette. Perfect for parties, easy dinners, or served alongside soups and grilled meats, these skewers offer a fun and convenient finger food option that's full of bold flavors.

Ingredients

Scale

Antipasto Skewers

  • 8 large green olives
  • 8 Genoa salami slices - halved
  • 8 mini Mozzarella cheese balls
  • 8 large basil leaves
  • 8 grape tomatoes
  • 8 cheese tortellini - cooked and cooled
  • 8 large black olives

Honey-Dijon Vinaigrette

  • 1/4 cup good vinegar (Champagne, sherry, or balsamic)
  • 2/3 teaspoon salt
  • 1/2 teaspoon Dijon mustard
  • 1/2 clove garlic - finely minced or 2 teaspoons minced shallots
  • 2 teaspoons honey
  • 3/4 cup extra-virgin olive oil
  • 1/4 teaspoon fresh ground pepper
  • 1/2 teaspoon fresh chives - chopped
  • 1/2 teaspoon fresh basil - chopped
  • 1/2 teaspoon fresh parsley - chopped

Instructions

  1. Prepare the vinaigrette: In a small bowl, whisk together the vinegar, salt, Dijon mustard, minced garlic (or shallots), and honey until well combined. Slowly drizzle in the extra-virgin olive oil while whisking to emulsify the dressing. Stir in the fresh ground pepper, chopped chives, basil, and parsley. Set aside to let the flavors meld.
  2. Assemble the skewers: Thread onto skewers one piece each of green olive, halved Genoa salami, mini mozzarella ball, large basil leaf, grape tomato, cooked and cooled cheese tortellini, and black olive in that order. Repeat for all skewers.
  3. Dress the skewers: Arrange the assembled antipasto skewers on a serving platter and drizzle the prepared honey-Dijon vinaigrette evenly over them. Allow them to marinate for 10-15 minutes before serving to enhance flavors.
  4. Serve and enjoy: These skewers are best served at room temperature as a tasty appetizer or alongside soups and grilled meats for a delightful finger food experience.

Notes

  • Make the vinaigrette ahead of time for better flavor integration.
  • Use high-quality extra-virgin olive oil and vinegar for the best taste.
  • These skewers can be prepared a few hours in advance and refrigerated until ready to serve.
  • Substitute cheese tortellini with cooked pasta shapes of your choice if desired.
  • For a vegetarian version, replace the Genoa salami with marinated artichoke hearts or roasted peppers.
  • Be sure to thread the ingredients gently to keep the delicate items intact.
  • Serve with extra vinaigrette on the side for dipping.
