Description

These Breakfast Egg Bites are a delicious, protein-packed morning meal perfect for busy schedules. Made with eggs, cheddar cheese, ham, and colorful vegetables, they bake into golden mini muffins that are convenient to grab and enjoy any time of day.

Ingredients

Scale

Egg Mixture

  • 6 eggs
  • 3 tablespoons milk
  • 3/4 cup grated cheddar cheese
  • 1/4 cup green onion, sliced
  • salt and pepper to taste

Vegetables and Ham

  • 1 cup ham, cut into small cubes
  • 3/4 cup red bell pepper, chopped
  • 1/4 cup red onion, chopped

Other Ingredients

  • 1/2 tablespoon olive oil
  • cooking spray for greasing the pan

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350º Fahrenheit and generously spray a mini muffin pan with cooking spray to prevent sticking.
  2. Sauté Ham and Vegetables: Heat olive oil in a skillet over medium heat. Add the ham, red bell pepper, and red onion. Sauté for about 5 minutes until the peppers and onion become slightly tender.
  3. Mix Eggs and Dairy: In a separate bowl or large measuring cup, whisk together the eggs and milk until blended smoothly.
  4. Add Cheese and Green Onions: Stir the grated cheddar cheese and sliced green onions into the egg mixture. For a denser texture, use a fork to blend instead of whisking.
  5. Combine Mixtures: Fold the sautéed ham and vegetable mixture into the egg mixture, ensuring even distribution.
  6. Fill Muffin Pan: Pour the combined mixture into the greased mini muffin pan cups, filling them almost to the top.
  7. Bake: Bake in the preheated oven at 350º F for 16 minutes or until the tops turn golden brown and a toothpick inserted comes out clean.
  8. Cool and Serve: Allow the egg bites to cool slightly before removing them from the pan. Serve warm and enjoy as a hearty breakfast or snack.

Notes

  • For a vegetarian version, omit the ham and add extra vegetables like spinach or mushrooms.
  • You can substitute cheddar cheese with any favorite cheese like mozzarella or feta for variety.
  • These egg bites freeze well; store in an airtight container and reheat in the microwave for a quick meal.
  • Use a fork to blend eggs for a denser, custard-like texture; whisking produces lighter bites.
  • Adjust seasoning with salt and pepper according to your preference.
  • If mini muffin pans aren’t available, standard muffin pans can be used but will require longer baking time.
