Description

Delight in the sweet and smoky flavors of grilled peaches topped with creamy vanilla ice cream, drizzled with caramel sauce, and garnished with fresh mint and roasted pistachios. This quick and easy dessert is perfect for summer gatherings or a simple treat any time.

Ingredients

Scale

Fruit

  • 2 large peaches, ripe

For Grilling

  • 2 tablespoons extra virgin olive oil, for brushing

Toppings

  • 4 scoops vanilla ice cream
  • Caramel sauce, for drizzling
  • 2 tablespoons roasted pistachios, roughly chopped
  • Fresh mint, roughly minced
  • Finishing salt, to taste

Instructions

  1. Prepare the Peaches: Halve and pit the peaches by cutting along the seam from stem to end, then twist the halves apart. If the pit remains, carefully cut around it with a sharp knife and remove with a spoon.
  2. Preheat the Grill: Heat a grill or grill pan over medium-high heat. While warming up, lightly brush the cut side of each peach half with olive oil to prevent sticking and enhance grilling.
  3. Grill the Peaches: Place the peach halves face down on the hot grill. Cook for 4 to 5 minutes until grill marks appear and the peaches soften slightly. Flip and grill the other side for 3 to 4 minutes until tender but still holding shape. Remove from heat.
  4. Assemble the Dessert: Once the peaches are cool enough to handle but still warm, arrange them on serving plates. Top each peach half with a scoop of vanilla ice cream. Drizzle caramel sauce over the top, then sprinkle with chopped pistachios, fresh mint, and a pinch of finishing salt if desired.
  5. Serve Immediately: Enjoy the warm and chilled contrast right away for the best flavor and texture experience.

Notes

  • This recipe shines in the summer when peaches are in season and at their sweetest.
  • You can substitute honey or maple syrup for caramel sauce for a different twist.
  • Use vegan vanilla ice cream and olive oil to easily make this dessert vegan-friendly.
  • Finishing salt helps highlight the peaches' natural sweetness but can be omitted for a less salty taste.
  • For an extra touch, add a sprinkle of cinnamon or nutmeg to the peaches before grilling.
