Ingredients
Scale
Green Beans
- 1 pound fresh green beans, stem ends snapped off
- 1 teaspoon olive oil
- 1/4 teaspoon fine sea salt
- 1/4 cup water or stock
Seasoning
- 1 tablespoon butter or vegan butter
- 3 medium garlic cloves, minced (about 1 tablespoon)
- 1/2 teaspoon lemon zest
- 1/4 teaspoon fresh ground black pepper
- Lemon wedges, for serving
Instructions
- Heat the oil: Add olive oil to a wide skillet over medium-high heat.
- Sauté green beans: Add the green beans and 1/4 teaspoon of fine sea salt. Cook for about 5 minutes until lightly blistered, tossing frequently to ensure even cooking.
- Steam with liquid: Pour in 1/4 cup of water or stock. Cover the skillet (or use foil if needed) and cook for 2 minutes to steam the beans.
- Evaporate liquid: Uncover the skillet, reduce heat to medium-low, and cook until the remaining liquid evaporates completely, about 2 to 3 minutes.
- Add flavorings: Stir in butter, minced garlic, lemon zest, and black pepper. Cook for another minute, stirring constantly to sauté the garlic and meld flavors.
- Serve: Remove from heat and serve immediately with lemon wedges on the side for squeezing over the green beans.
Notes
- Store cooked green beans in an airtight container in the fridge for 3 to 4 days.
- Reheat gently in a skillet over medium heat to maintain texture.
- You can substitute vegan butter for a dairy-free version.
- Using stock instead of water adds extra depth of flavor.
- Ensure not to overcook green beans to keep them crisp and vibrant.
