- 2 tbsp cacao powder
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp sea salt
Wet Ingredients
- 2 large eggs
- 3 tbsp honey (or maple syrup)
- 3 tbsp melted unsalted butter
- 2 tsp vanilla extract
- 1 tbsp dark rum (optional)
- 2 cups buttermilk
Other
- Cooking oil spray (avocado oil or 1 tbsp cooking oil for brushing)
Instructions
- Mix dry ingredients: In a medium bowl, whisk together gluten-free flour, Christmas spice, cacao powder, baking powder, baking soda, and sea salt. Set aside.
- Mix wet ingredients: In a large mixing bowl, whisk eggs, honey, melted butter, vanilla extract, and dark rum if using until well combined.
- Add buttermilk: Pour in the buttermilk and whisk again to combine all wet ingredients thoroughly.
- Combine wet and dry: Add the dry ingredients to the wet ingredients gradually, whisking until just combined. The batter should have a few lumps; do not overmix.
- Preheat waffle iron: Heat your waffle iron to medium heat. Spray or brush it lightly with cooking oil to prevent sticking.
- Cook waffles: Spoon about ¼ cup of batter per waffle into the waffle iron, adjusting for your waffle iron size. Cook each waffle for 5 minutes or until golden brown and crisp, following the manufacturer’s instructions.
- Keep waffles warm: Place cooked waffles on a baking sheet in a single layer and keep warm in a preheated oven at 200°F to maintain crispness while cooking the remaining batter.
- Serve: Serve waffles warm with your choice of yogurt, nut butter, berries, or other favorite toppings. Enjoy your festive Christmas waffles!
