  • 1 egg (lightly beaten)
  • 1 cup panko bread crumbs

Chipotle Dipping Sauce

  • Chipotle dipping sauce (prepared or store-bought)


Instructions

  1. Preheat Oven Preheat your oven to 400 degrees Fahrenheit and prepare a sheet tray or baking dish by pouring 1 tablespoon of oil onto it, spreading evenly to grease the surface.
  2. Prepare Avocado Slices Slice the avocados and optionally squeeze fresh lime juice over them to prevent browning. Season the slices with salt and pepper to taste.
  3. Coat the Avocado Dredge each avocado slice in flour first, then dip into the beaten egg, and finally coat thoroughly with panko bread crumbs, ensuring an even and complete coverage for optimal crispness.
  4. Arrange on Baking Tray Place the coated avocado slices in a single layer on the greased sheet tray. Drizzle the remaining 1 tablespoon of oil over them, or lightly spray with cooking spray to aid in crisping during baking.
