Garlic sauce

  • 1 whole head garlic (cloves peeled)
  • 1/2 cup chicken broth or stock
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1 cup heavy/whipping cream
  • Parsley, chopped (optional)


Instructions

  1. Prepare chicken: Cut each chicken breast in half lengthwise to make 4 smaller cutlets. Season generously with salt and pepper, then dredge each piece in flour until coated.
  2. Sear chicken: Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. When hot, add chicken cutlets and sauté for 5 minutes on each side, or until golden brown. Remove from pan and set aside.
  3. Cook garlic: Reduce heat to medium or medium-low if using a cast iron skillet. Add remaining 1 tablespoon butter and let it melt. Add peeled garlic cloves and cook for 3-4 minutes, stirring frequently, until cloves are lightly browned.
  4. Deglaze and reduce: Pour in chicken broth, lemon juice, and sprinkle garlic powder into the pan. Let the mixture bubble and reduce for approximately 4 minutes until the liquid is slightly thickened.
  5. Add cream and simmer: Stir in the heavy cream and return the chicken cutlets to the pan. Simmer gently for about 5 minutes until the sauce thickens and the chicken is cooked through.
  6. Serve: Garnish with freshly chopped parsley if desired and serve hot.

  • For extra flavor, you can add a splash of white wine when deglazing the pan before adding the broth.
  • If you prefer a thicker sauce, simmer the cream a few minutes longer.
