Instructions

  1. Cook Sausage: Add the sliced sausage medallions to a large skillet or braiser over medium heat and sear on both sides until they crisp up a bit, about 4 minutes total. Remove the sausage and place on a paper towel-lined plate, keeping the rendered sausage oil in the pan.
  2. Cook Veggies: In the same skillet with the sausage oil, add the mushrooms, red and yellow bell peppers, and minced garlic. Sauté for about 3 minutes or until the mushrooms begin to brown.
  3. Add Ingredients: Add the gluten-free penne pasta, diced fire-roasted tomatoes, chicken broth, and Cajun seasoning to the skillet. Stir gently until everything is evenly combined. Cover with a lid and bring the broth to a boil.
  4. Simmer Pasta: Once boiling, reduce the heat to medium and let the pasta simmer for 15 minutes, stirring every couple of minutes to prevent sticking, until the pasta is tender and cooked al dente.
