Ingredients
Scale
Main Ingredients
- 1 ½ cups hazelnuts (raw)
- ½ cup orange marmalade (fruit sweetened)
- ¾ cup cocoa powder
- 3 tbsp maple syrup
- 2 tsp pure vanilla extract
- ¼ cup coconut sugar
Coating
- ½ cup finely chopped hazelnuts or extra cocoa powder
Center
- 15-18 whole hazelnuts for center
Instructions
- Prepare hazelnut meal. Place the raw hazelnuts in a food processor and pulse until they form a fine meal with some texture remaining.
- Combine main ingredients. Add orange marmalade, cocoa powder, maple syrup, and vanilla extract to the food processor with the hazelnut meal. Process until combined well.
- Add coconut sugar and process. Add the coconut sugar to the mixture and pulse again until the mixture starts to come together and slightly balls up. Test the mixture by rolling a small portion into a ball; if too wet, add a bit more cocoa powder, if too dry, add more maple syrup or marmalade and process again.
- Prepare the coating. Spread the finely chopped hazelnuts or cocoa powder in a shallow bowl. Line a tray or plate with parchment paper for placing the truffles.
- Form truffles with hazelnut centers. Scoop 1 to 2 tablespoons of the mixture and roll into a ball. Press one whole hazelnut into the center and roll the ball again to fully enclose the nut.
- Coat the truffles. Roll each truffle in the chopped hazelnut or cocoa powder coating, then place them on the parchment-lined tray.
- Chill and serve. Refrigerate the truffles for 30 minutes to firm up. Store in a sealed container at room temperature, refrigerated, or frozen. Refrigeration is preferred for the best texture.
Notes
- The mixture should be sticky enough to hold together but not too wet—add cocoa powder or maple syrup to adjust consistency if needed.
- You can substitute orange marmalade with another fruit jam if desired, but the orange flavor pairs beautifully with hazelnuts and cocoa.
- Chilling time can be extended if you want firmer truffles before serving.
- These truffles are gluten-free, vegan, and refined sugar-free when using natural coconut sugar and maple syrup.
- Store truffles in airtight containers to maintain freshness and flavor.
