Description

Cheesy Chicken Fajita Casserole is a delicious and easy-to-make one-pan dish featuring seasoned chicken breasts baked with colorful bell peppers, onions, and melted cheese. This flavorful casserole brings the taste of fajitas to your dinner table with minimal prep and a creamy cheesy finish, perfect for a satisfying family meal.

Ingredients

Scale

Chicken and Seasoning

  • 1 ½ pounds chicken breasts skinless and boneless
  • 2 tablespoons fajita seasoning
  • 1 tablespoon vegetable oil

Vegetables

  • 2 medium bell peppers cut into strips
  • 1 medium yellow onion sliced

Toppings

  • 1 ½ cups shredded cheese
  • Fresh chopped cilantro for garnish

Instructions

  1. Preheat oven: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) to get it ready for baking the casserole.
  2. Season the chicken: In your baking dish, season the chicken breasts evenly with the fajita seasoning and vegetable oil. Use your hands to make sure the seasoning is well distributed over the chicken.
  3. Add vegetables and cheese: Place the sliced bell peppers and onions on top of the chicken. Sprinkle a little extra fajita seasoning over the vegetables if desired, then top everything evenly with the shredded cheese.
  4. Bake the casserole: Place the dish in the preheated oven uncovered and bake for 30 minutes until the chicken is cooked through and the cheese is melted and golden.
  5. Serve and garnish: Remove the casserole from the oven and serve immediately, garnished with fresh chopped cilantro for a burst of color and flavor.

Notes

  • To ensure the chicken is safe to eat, use a meat thermometer to check that the internal temperature reaches 165°F (74°C).
  • Any melting cheese works well in this recipe, so feel free to use your favorite variety.
  • To reduce calories, omit the cheese and instead top with a mixture of parmesan and panko breadcrumbs, sprayed lightly with oil before baking.
  • For faster cooking, cube the chicken into smaller pieces which will reduce the bake time.
  • Add cooked pasta to the casserole to make it a heartier meal; cook the pasta al dente before mixing it in.
  • Serve alongside garlic butter pasta, plain pasta, Mexican rice, or cauliflower rice for a low-carb alternative.
  • Reheat leftovers in the oven at 350°F (175°C) for 15-20 minutes or use the microwave for convenience.
