Description

This refreshing blackberry sorbet is a deliciously smooth and vibrant frozen treat bursting with fresh berry flavor and a hint of lime. Perfect for a light dessert or a cool snack on a warm day, it's naturally fruity, subtly sweet, and made with simple ingredients.

  • 2/3 cup sugar
  • 2/3 cup water

Instructions

  1. Make Simple Syrup: Place the sugar and water in a small saucepan over medium heat. Warm the mixture, stirring occasionally, just until the sugar dissolves completely without bringing it to a simmer. Remove from heat and let it cool to room temperature.
  2. Prepare Blackberry Puree: Wash the blackberries thoroughly and place them in a blender or food processor. Blend until the fruit is broken down well. Pass the mixture through a fine strainer, pressing it firmly to extract as much pulp as possible. Discard the seeds and solids left behind.
  3. Combine Ingredients and Chill: Stir the strained blackberry puree into the cooled syrup along with the lime juice. Mix thoroughly to combine all the flavors. Refrigerate the mixture for at least one hour, preferably longer or overnight, to chill it completely.
  4. Churn the Sorbet: Pour the chilled blackberry mixture into an ice cream maker and churn according to the manufacturer’s directions until it reaches a soft-scoop consistency, about 20 minutes.
  5. Freeze Until Firm: Transfer the sorbet into a freezer-safe container and freeze for at least two to three hours to allow it to firm up for serving and long-term storage.
  6. Serve: Before scooping and serving, let the sorbet sit at room temperature for a few minutes to slightly soften for the best texture.

Notes

  • For a smoother consistency, make sure to strain the blackberry puree thoroughly to remove all seeds.
  • You can adjust the amount of lime juice to your taste preference for more or less tartness.
  • If you don't have an ice cream maker, pour the mixture into a shallow container and freeze, stirring every 30 minutes to break up ice crystals until smooth and frozen.
  • This sorbet is naturally vegan and gluten free.
