Description

These Easy Apple Cookies combine the sweetness of apples and honey with the tanginess of sharp cheddar cheese for a unique, delicious treat perfect for breakfast or snacktime. Made with oats, applesauce, and spices, these cookies are soft, chewy, and wholesome.

Ingredients

Scale

Dry Ingredients

  • 3/4 cup (105 grams) all-purpose flour
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon ground or grated nutmeg
  • 1/2 teaspoon kosher salt

Wet Ingredients

  • 1/4 cup smooth applesauce
  • 1/3 cup honey
  • 2 teaspoons vanilla extract
  • 1 large egg

Main Ingredients

  • 1 medium apple, such as Granny Smith or Gala, cut into small dice (about 1 1/2 cups)
  • 1 1/2 cups (155 grams) oats
  • 1 1/4 cups shredded (105 grams) sharp cheddar cheese
  • 1/2 cup (85 grams) raisins, optional

Instructions

  1. Prepare Baking Sheet: Line a sheet pan with a silicone baking mat or parchment paper to prevent sticking and ensure easy cleanup.
  2. Mix Dry Ingredients: In a small bowl, whisk together the all-purpose flour, baking powder, nutmeg, and kosher salt until evenly combined.
  3. Combine Wet Ingredients: In a separate large bowl, whisk the smooth applesauce, honey, vanilla extract, and egg until fully blended into a smooth mixture.
  4. Incorporate Dry into Wet: Gradually add the dry ingredients to the wet ingredients, whisking until there are no visible dry spots and the batter is uniform in texture.
  5. Add Main Ingredients: Using a spoon or spatula, fold in the diced apples, oats, shredded sharp cheddar cheese, and raisins if using. Stir gently until everything is evenly distributed. The batter will be sticky and somewhat loose.
  6. Shape Cookies: Scoop 1/4 cup portions (about 60 grams each) and shape each into a round approximately 3/4 inch thick, similar to forming a small burger patty. Arrange the 13 cookies close together on the prepared baking sheet as they will not spread during baking.
  7. Bake: Place the baking sheet in the oven and bake for 18 minutes. You’ll know they’re done when the edges start to brown, there’s a sizzling sound, and the bottoms of the cookies show visible browning.
  8. Cool and Store: Transfer the cookies to a wire rack to cool completely. They will be soft initially but will firm up as they cool. Store airtight in the refrigerator for up to one week or freeze for up to one month.

Notes

  • These cookies make a wonderful breakfast or snack due to the balance of sweet apples and tangy cheddar.
  • You can omit the raisins if you prefer a less sweet cookie or want to adjust texture.
  • Using sharp cheddar cheese provides the best flavor contrast, but mild cheddar can be substituted for a less intense taste.
  • Make sure the apples are diced finely to ensure even texture and baking.
  • Store cooled cookies in an airtight container to maintain freshness and texture.
